Book Review
Warmly effusive and dear yet gritty, Paula H. Deen seems mythically Southern. But this cooking luminary, proprietor of Savannah, Georgia's Lady & Sons restaurant, is the real thing. The Lady & Sons Just Desserts, her all-sweets follow-up to The Lady & Sons Savannah Country Cookbook and The Lady & Sons, Too!, celebrates the Southern sweet tooth with 120 recipes, including traditional formulas for the likes of Brown Sugar Pound Cake and Lemon Chess Pie as well as best-loved restaurant innovations like Turtle Cake, Lemon Curd Pudding, and Gooey Butter Cake. ("These are very, very rich," Deen advises, "and a little goes a long way--even for piggies like me!") Lovers of the restaurant--which grew to prominence from $200 and lots of determination--as well as those seeking easy-to-fix temptations should put this book to happy...

The 50 Best Cheesecakes in the World : The Winning Recipes from the Nationwide "Love that Cheesecake" Contest

0312092393

·

From Publishers Weekly
If there is any doubt that cheesecake is America's favorite dessert, then this miniature volume may reaffirm the notion. The collection includes an array of recipes chosen from winners of the "Love That Cheesecake" contest and from some of the country's most famous restaurants. The 50 best selections include "Desert Storm," "Tropical Passion," "Old-Fashioned Goodness" and "Citrus Cloud." Obscurely organized by pan size and given gratuitous anecdotes, the recipes have a saccharine tone. The basic steps are minimal, with few variations given in crust. Nevertheless, the Zismans ( 55 Best Brownies in the World ; 47 Best Chocolate Chip Cookies in the World ) should be thanked for their practical tips. For those novice bakers who are guilty of covering up cracks or "character lines" with huge amounts of fillings, fresh...

Luscious Chocolate Desserts

0811835162

·

From Publishers Weekly
There’s no shortage of chocolate cookbooks out there, but this volume stands out for its user-friendly nature and the sheer deliciousness of its recipes. Longbotham (Luscious Lemon Desserts), a former food editor at Gourmet, clearly knows her material: she provides a concise history of chocolate, a description of the journey from cacao pod to hot cocoa, and a brief glossary explaining the myriad different forms chocolate can take. She even includes a short discussion on the health benefits of chocolate consumption, which should come as a relief to anyone tempted by fat and calorie-laden recipes like Killer Chocolate Cheesecake or Luscious Chocolate Custard Ice Cream. Individual Molten Chocolate Cakes have become a restaurant cliché, but made at home, they regain both their originality and their...

Semi-Homemade Desserts
Sandra Lee (Editor)

September 2005
Paperback
·

From Publishers Weekly
In this newest by Lee, author of the bestselling Semi-Homemade Cooking, a typical ingredients list reads like an index of advertising sponsors-Duncan Hines, Nestle, Carnation. According to Lee, that's the idea. Why buy fresh ingredients when you can buy mixes and prepared foods that allow you to skip a few steps? The gimmick-buy name-brand food items and transform them into glorious dishes-is a good one, but the results are often less than satisfactory. (One additional downside with this approach-aside from the chemical and additives involved-is that many of these dishes emphasize attitude rather than flavor.) Recipes such as Pastel Petit Fours, which are relatively time-intensive, look much better than they taste. This is less true of the Frozen Oreo Cake, but the Easter Bunny Cake (which requires eight...

With little skill, surprisingly few ingredients, and even the most unsophisticated of ice-cream makers, you can make the scrumptious ice creams that have made Ben & Jerry's an American legend. BEN & JERRY'S HOMEMADE ICE CREAM & DESSERT BOOK tells fans the story behind the company and the two men who built it-from their first meeting in 7th-grade gym class (they were already the two widest kids on the field) to their "graduation" from a $5.00 ice-cream-making correspondence course to their first ice-cream shop in a renovated gas station. But the best part comes next. Dastardly Mash, featuring nuts, raisins, and hunks of chocolate. The celebrated Heath Bar Crunch. New York Super Fudge Chunk. Oreo Mint. All-American Dessert Book
Nancy Baggett

October 2005
Hardcover
·

From Publishers Weekly
Apple pie may be America's signature dessert, but if this fine cookbook is any measure, there are a number of contenders that could reign equally supreme. Take Yellow Sour Cream–Butter Layer Cake, for example: a staple of wedding and birthday celebrations, it can be paired with nearly any icing and, in Baggett's version, is moist, aromatic and "very buttery." Baggett (The All-American Cookie Book) canvassed the country, visiting bakeries, restaurants, confectioneries and old-fashioned soda shops to come up with this collection of 150 recipes. Her book covers pies, tarts and cheesecakes; cakes and frostings; fruit desserts; puddings; cookies; ice creams; candies; and easy gifts and treats, such as Maple Sugar on Snow (a popular Vermont confection). There are, naturally, many regional favorites, such as Black...

Baking and Pastry : Mastering the Art and Craft
Culinary Institute of America (Editor)
0471443824
April 1, 2004
Hardcover
·

From Publishers Weekly
Having attained a sort of unofficial status as the final arbiter in American cooking, the Culinary Institute of America (that other CIA) brings the proper authority to this encyclopedic work. Surely no single chef or restaurant team would be trusted to cover such a range of subjects, from yeast doughs, quick breads, pies and cookies to confections, decorations and wedding cakes. Unfortunately, this comprehensiveness is matched by a sense of style befitting an encyclopedia, or, perhaps more accurately, a textbook. Sections in the introduction on "dressing for safety" and "managing human resources" make it clear that the CIA (and Wiley) intend to sell more than a few copies to students and working chefs. The home cook who skips right to the recipes will sooner or later be frustrated by the professional quantities...

The Church Ladies' Divine Desserts
Brenda Rhodes Miller

Jan 2003
Paperback

Book Review
The African American church-going experience is richly defined through the recipes and stories collected in Brenda Rhodes Miller's The Church Ladies' Divine Desserts: Heavenly Recipes and Sweet Recollections. Throughout the book, Miller introduces us to many church ladies and shares their sweet yet significant contributions to their neighborhood churches and communities.

The phrase "church social" is equivalent to homemade and the recipes are of the sort one would expect to find on the tables at a church social or bake sale, ranging from Pineapple Upside-Down Cake to Sweet Potato Pie. Boxed cake mixes are forbidden with this crowd and Miller even includes a story of one church lady from her childhood who was quite comfortable sending individuals back home if they had brought "store-bought" baked goods to a gathering.

The Magnolia Bakery Cookbook: Old-Fashioned Recipes From New York's Sweetest Bakery
Jennifer Appel, Allysa Torey
0684859106
November 3, 1999
Hardcover
·

From Publishers Weekly
Appel and Torey are owners of the eponymous Manhattan bakery, which turns out the kind of white-cake treats that graced most tables decades ago. Retro deserts include Chocolate Wafer Icebox Cake, made with Nabisco wafers, and Oatmeal, Raisin, Almond Cookies. These recipes are classics, with a few updated touches. Pecan Pie was handed down from a Texas grandmother; Magic Cookie Bars are packed with chocolate chips and coconut and sweetened with three cans of condensed milk. The unfortunately named Dump Cake is a throwback to old women's magazine recipes, consisting of cherry pie filling, canned pineapple, cake mix, pecans and butter. These super-sweet, mostly buttery items hark back to a pre-cholesterol eraAevidenced by Chocolate Chip, Peanut, Banana Loaf, which the authors describe as "healthy." A chapter on...

Grand Finales: A Neoclassic View of Plated Desserts
Tish Boyle, Timothy Moriarty

January 26, 2000
Hardcover

Book Review
Plated desserts--artfully arranged confections prepared from multiple components--are a modern restaurant mainstay. In Grand Finales, authors Tish Boyle and Timothy Moriarty present 53 such creations, the work of 23 leading American pastry chefs who have been challenged to make "neoclassic" versions of traditional desserts. Thus, for example, tart tatin, the venerable French apple galette, is reconfigured by chef Lincoln Carson as Pear Tatin with Vanilla Ice Cream and Caramel Sauce. Like the other recipes in the book, the pear tatin requires multiple subpreparations (in this case 5, though 7 to 10 elsewhere is not unusual); frequently large recipe yields (72, in one case), ingredient quantities given by weight, and restaurant-ingredient "call-fors" (like isomalt and trimoline) further alert us to the fact--unstated--that the...

The 1200-Calorie-a-Day Menu Cookbook : Quick and Easy Recipes for Delicious Low-fat Breakfasts, Lunches, Dinners, and Desserts
Nancy S. Hughes

From Booklist
Hughes breaks the 1,200 calories a day into breakfast and lunch recipes that contain no more than 350 calories each, dinner recipes that contain no more than 400 calories, and dessert recipes that contain only 100 calories. The majority of the meals contain 20 percent or less of their total calorie content from fat; all contain less than 30 percent. The totals are listed with each recipe. Hughes, author of three other cookbooks, insists this is not a diet plan but rather a comprehensive collection of recipes that can be used to limit calorie and fat intake. Many of the recipes can be prepared in 15 minutes or less. George Cohen
