Rachael Ray's 30-Minute Get Real Meals: Eat Healthy without Going to Extremes
Rachael Ray
1400082536
March 2005
Paperback
·

From Publishers Weekly
Part of Ray's appeal to legions of Food TV fans is her loose, nonnitpicky approach to cooking at home. Every meal she presents can be prepared in 30 minutes or less, and she consistently emphasizes simplicity and nonfussiness. So it's no surprise that Ray's contribution to the supposedly waning low-carb cookbook genre does not strictly adhere to the diet. Ray adores carbohydrates—"I cannot and will not eat without them"—and she believes consuming them "in moderation" is a healthy option. This selection of recipes, then, does include pasta dishes, but Ray wisely makes them heavy on the meat and vegetables and low on pasta (a half pound for every four entrées). Her devoted viewers will delight at the prospect of Bucatini with Sausage, Peppers, and Onions; Creamy Polenta and Bolognese Sauce; and Eggplant and Wild...

Book Review
Do restaurant menus featuring full-color food photos kick your salivary glands into high gear? Angela Wilkes's inviting, heavily illustrated cookbook offers the same satisfaction of seeing exactly what you're going to get--along with the ensuing hunger pangs. Children can follow each recipe step by step, with photographs that show what you're supposed to do, how to do it, and when. Thankfully, the 60 recipes are appealing dishes the whole family will want to eat, from Salade Nicoise and Filled Crepes to the more basic Tacos and Guacamole and Spicy Chicken Burgers. The chapters include: "Before You Start," "Kitchen Rules," "Super-Fast Snacks" (Cheater's Pizzas, Crunchy Crostini, Fruit Smoothies), "Speedy Meals" (Classic Omelettes, Vegetable Soups, Chicken Curry and Rice);...

Everyday Italian: 125 Simple and Delicious Recipes
Giada de Laurentiis
1400052580
February 2005
Hardcover
·

From Publishers Weekly
With its cover image of the fetching de Laurentiis wearing a low-cut top and its promise of easy, tasty Italian recipes, this cookbook is sure to draw in home cooks who don't know how to make a basic marinara sauce and want to be introduced them to the beauty and simplicity of Italian cuisine. Which is, of course, a good thing, but a shame, too, since this work lacks depth or meaning. Readers seeking a true introduction to the building blocks of Italian cooking would be worlds better off with one of Marcella Hazan's or Lidia Bastianich's early primers. What those who are lured in by the good looks and charm of de Laurentiis (granddaughter of film producer Dino and star of Food Network's Everyday Italian) will get is an unsophisticated but decent selection of Italian-American classics, from antipasto to pasta, meat dishes to...

Rachael Ray 365: No Repeats: A Year of Deliciously Different Dinners (A 30-Minute Meal Cookbook)
Rachael Ray

From Publishers Weekly
Food Network darling Ray wants home cooks to become more "instinctual," and this assortment of quick meals is expansive enough to encourage even novices to wing it. The author hopes readers cook their way through the entire book; to that end, she organizes the recipes not by course or main ingredient (though there are indexes), but by number. The organization takes some getting used to. Helpful but occasionally jarring "tidbits" pop up everywhere, and many "recipes" make more than one dish, so cooking just one requires a fair amount of reading. For example, number 16 encompasses "Oregon-Style Pork Chops with Pinot Noir and Cranberries; Oregon Hash with Wild Mushrooms, Greens, Beets, Hazelnuts, and Blue Cheese; [and] Charred Whole-Grain Bread with Butter and Chives." Readers making just the hash must read around the instructions...

April 2006

From Publishers Weekly
Ray has made quite a name for herself on The Food Network, where she hosts four shows, and in a baker's dozen of cookbooks mostly dedicated to easy-to-prepare cuisine. To love this book is to love the author's quirks, like calling extra virgin olive oil "EVOO" and hearty soups "stoups." But her recipes are tasty, simple and often sophisticated enough to turn even doubters into fans. This cookbook, the author's 11th, is dedicated to quick after-work meals and is separated into chapters called "Meals for the Exhausted," "Meals for the Not Too Tired" and "Bring it On! (But Be Gentle)." A meal for the pretty much awake, Smoked Paprika Chicken with Egg Noodles and Buttered Warm Radishes, is the sort of thick, nourishing plate a person craves when the thermometer drops. Pasta in a Creamy Artichoke and Saffron Sauce is...

Fast Food Fix: 75 Amazing Recipe Makeovers of Your Fast Food Restaurant Favorites
Devin Alexander

From Publishers Weekly
Is it possible to make fries that taste just like McDonald's with no trans-fatty-acids? Yes, but it's not easy. Blessed with an obsessive, analytical mind and cursed with a craving for Burger King, Alexander offers healthier (but not necessarily healthy) substitutes for brand name burgers, milkshakes, fries and pizza. In true fast food fashion, recipes are single servings, but some are generous enough to serve two. Though substitutions are included (use a whole wheat for a white bun or turkey for pork), Alexander reminds readers the goal is to "cut fat and calories...without affecting taste." This takes precision: though the Popeye's Cajun Battered Fries are still spicy and delicious and relatively straight-forward to make, the recipe for Hardee's 1/3-lb Western Bacon Thickburger has steps for breading onion...

Book Review
Over time, twin enterprises Cook's Illustrated magazine and America's Test Kitchen have published many books dedicated to providing exhaustively tested recipes--"best" versions of traditional dishes plus definitive takes on kitchen equipment and ingredients. Some series readers have complained of endlessly recycled or rejiggered recipes; others take each book at face value, finding the formulas and cooking insights good and helpful. America's Test Kitchen Family Cookbook, which calls itself a cookbook, cooking school, and kitchen reference in one, offers over 1,200 approachable recipes for a very wide range of dishes--from "weekday" fare like Creamy Rice Casserole, Cheesy Nachos with Spicy Beef, and Skillet Lasagna, to dressier recipes, including Pan-Seared Lamb Chops with Red Wine Rosemary Sauce, Roasted Trout...

Jacques Pepin Fast Food My Way

Book Review
Over time, in his cookbooks, and on his TV series, Jacques Pépin has taught people how to cook simple, fully flavored dishes--food that reflects his French training while embracing American informality. Jacques Pépin: Fast Food My Way takes this approach one step further by providing 100-plus recipes for a wide range of delicious, meant-to-be fast dishes. These include Stuffed Scallops on Mushroom Rice; Chicken Breasts on Mashed Cauliflower with Red Salsa; Pasta, Ham, and Vegetable Gratin; and Apple, Pecan, and Apricot Crumble. The "my way" of the title can mean the use of time-saving tools (Pépin uses pressure cookers to achieve easy stews like his beef short-rib, mushroom, and potato dish) and convenience foods (canned black bean soup or sweet potatoes for new soup versions). Generally, though, the...

First Meals (New Expanded Edition)

Book Review
There's a popular game at baby showers in which the new mom-to-be has to taste jarred baby food and guess its contents. Inevitably, the first comment is "Yuk! How do they eat this stuff?" The answer, of course, is that babies don't know there's an alternative--fresh, delicious, wholesome food made at home. In the beautifully and extensively illustrated First Meals, Annabel Karmel explains how simple and satisfying it is to make baby's food yourself--from the earliest mashed banana and steamed carrot purees to Singapore Noodles for 3- to 5-year-olds.

Karmel begins with an extensive section on early nutrition, pointing out that while grownups are often encouraged to follow a high-fiber, low-fat diet, "the under 5s need significantly more fat and concentrated sources of calories and nutrients to fuel their rapid growth...
